Murukku:
This is a healthy, tasty and crispy snack which remains fresh for days. This dish can be made with rice and urad dal. My mother-in-law from whom I learnt this recipe, says it tastes excellent and its my family favorite. I will tell u the procedure to prepare this…
Ingredients required:
· Raw rice - 2 cups
· Urad dal - ¾ cup
· Fried gram - ½ cup
· Pepper - 2 tbsp
· Cumin seeds - 3 tbsp
· Sesame seeds - 2 tbsp
· Asafoetida - ¼ tsp
· Clarified butte - 2 tbsp
· Salt to taste
Procedure:
- Wash raw rice and soak in water for 6 hours.
- Drain water from it completely and dry the rice grains.
- Take a dry pan, roast urad dal to light golden.
- Allow to cool and mix with dried rice.
- To this add pepper and cumin seeds.
- Grind this to fine smooth powder in a mixer.
- Sieve the flour to remove any granules and dirt present in it.
- Add asafoetida, salt, sesame seeds, cumin seeds to the rice flour and mix well.
- Knead the flour gently by sprinkling water, to soft dough.
- Take care, while adding water, since the dough shouldn’t be very tight or watery.
- The crispy texture of murukku lies in the nature of dough.
- Add 2 tbsp butter to the dough and allow to remain for 10 mins.
- Heat oil in a frying pan.
- Take a little amount of dough, stuff it in murukku acchu, and press it to concentric circles, in hot oil.
- Deep fry the murukku to golden colour, turn it to other side and fry in lower flame.
- Crispy, crunchy Murukku ready to taste.
