Hyderabadi Veg Dum Biryani









Hyderabadi Veg Dum Biryani:




Hyderabadi Vegetable Dum Biryani is an amazingly flavorful main course rice dish. The chopped vegetables in a spicy masala is a rich treat to all Veg Lovers. In this recipe , the biryani is cooked partly on steam / dum to reatain the aroma and taste. 


This staple food of Hyderabadi cuisine is a traditional celebration meal and is most popular of all other versions of biryani recipes.






Lets see  the recipe of delicious Hyderabadi Dum biryani..you should try!










Ingredients:








  • Basmati rice                  -  2 cups

  • Garam masala pwd        -  1 tbsp

  • Onion                            - 2

  • Vegetables chopped ( carrot, peas, beans, potato ) -  1 ½  cup

  • Green chilly                   - 2

  • Saffron                         - few strands

  • Milk                              - 2 tbsp

  • Ghee                            - ¼ cup

  • Ginger garlic paste        - 1 tbsp

  • Turmeric pwd                - a pinch

  • Red chilly pwd              - 1 tbsp

  • Curd                             - 1 cup

  • Cashew                        - 6

  • Raisins                         - 8

  • Mint and coriander leaves          - ½  cup

  • Salt to taste













Method:




















  1. Wash and soak the basmati rice for 5 mins.

  2. Drain the water.

  3. Add 3 1/2 cups of water, sprinkle salt and garam masala.

  4. Combine well and cook until done.

  5. Allow to warm, separate the rice grains and keep it aside.

  6. Chop onions, vegetables, slice green chillies lengthwise.

  7. Soak saffron in warm milk for 10 mins.

  8. Heat a heavy bottomed fry pan and add ghee.

  9. Add remaining garam masala pwd and sauté for a minute.

  10. Add onions and fry to light brown.

  11. Add green chillies, ginger garlic paste and sauté further.

  12. Now add turmeric pwd, red chilly pwd, salt, chopped vegetables and stir well in medium flame.

  13. Divide curd to two equal portions.

  14. Add one portion of curd, combine well.

  15. Now add half cup of water and allow the vegetables to cook covered.

  16. Simmer until the vegetables are done.

  17. Add half of the freshly chopped coriander , mint leaves and sauté for 30 seconds.

  18. Dissolve saffron soaked in milk to second portion of curd.

  19. Sprinkle half of this over the cooked vegetables.

  20. Spread half of the cooked rice and sprinkle again the remaining mint , coriander leaves and saffron curd.

  21. Now top it with remaining rice.

  22. Spread fried onion, cashew, raisins evenly on top of rice.

  23. Seal it with a  moist white cloth on top tightly.

  24. Keep it in dum for 10 to 15 mins.

  25. Remove from flame and fluff the rice gently

















  1. Enjoy  hot with raita, chips and mint chutney!

Vegetable Biryani





Vegetable  Biryani:


This is a very exotic rice dish with spicy vegetables. The rich aroma makes this dish very inviting among kids n all. Also, this biryani is a special dish on party occasions and goes very well with onion raita or any curries. This is a complete meal in itself and healthy as it has all the vegetables required and takes very less effort to prepare.

Ingredients:


  • Raw rice                        - 2 cup

  • Oil                                - 3 tbsp

  • Ghee                            - 1 tbsp

  • Onion                           - 2

  • Tomato                         - 2

  • Carrot                           - 1

  • Potato                          - 1

  • Beans                           - 50 g

  • Peas                             - ¼ cup

  • Green chilly                   - 2

  • Ginger garlic paste        - 1 tbsp

  • Cinnamon                     - 1

  • Cloves                          - 3

  • Saunf                           - ¼ tsp

  • Cumin                           - ½ tsp

  • Black pepper pwd         - ¼ tsp

  • Red chilly pwd              - 1 tsp

  • Garam masala pwd        - 1 tsp

  • Yoghurd                       - small cup

  • Mint leaves                   - handful

  • Cashew                        - 5

  • Coriander leaves

  • Salt to taste





Method:






  1. Wash rice and soak in water for 10 mins.

  2. Drain and keep aside.

  3. Heat oil in a frying pan

  4. Sauté cinnamon, cloves, saunf, cumin for half a minute.

  5. Then add chopped onion and fry till the color changes to pink.

  6. Add green chillies, ginger garlic paste, black pepper pwd and sauté for a minute.

  7. Add salt and red chilly pwd, garam masala pwd and stir well.

  8. Add finely chopped tomatoes and fry till they are cooked.

  9. Add all the chopped thin pieces of  vegetables and green peas and fry .

  10. Next add yoghurd and stir well.

  11. Turn off the flame.

  12. Heat a tbsp ghee in a pressure pan.

  13. Add rice and sauté for a minute.

  14. Add the above veg mixture and combine well.

  15. Sprinkle finely chopped mint leaves and sauté for a minute.

  16. Add 3 ½ cups of water and combine.

  17. Pressure cook for 1 whistle and simmer for 5 mins.

  18. Once the pressure goes off, open the lid and mix well with very light hands.

  19. Decorate with golden roasted cashew and fresh coriander leaves.





  1. Serve hot with onion raita…:)

Carrot Peas Biryani



 

Carrot Peas Biryani:

This is a yummy South Indian Biryani variety. Delicious carrot and peas are cooked with spices,  mixed with rice and pressure cooked. I tried this special dish for a evening party. Now, it has become one of our favorite biryani. This goes very well with spicy gravy or raitha. This Biryani is not only healthy n tasty,  also very and easy to prepare.

Here is the easy to follow healthy Peas Carrot Biryani recipe…



Ingredients:



·         Biryani rice                                - 2 cups
·         Carrot                                       - 100 g
·         Peas                                         - ½ cup
·         Onion                                       - 3
·         Green chilly                               - 4
·         Ginger garlic paste                    - 1 tbsp
·         Garam masala pwd                    - 1 tsp
·         Cardamom                                - 2
·          Cloves                                     - 2
·         Bay leaf                                    - 1
·         Marathi moggu                          - 1
·         Cinnamon                                 - 1
·         Oil                                            - 2 tbsp
·         Ghee                                        - 1 tbsp
·         Cashew                                    - 6
·         Mint leaves, coriander leaves     - 2 cup
·         Salt to taste

 

Method:

1.     Wash & soak biryani rice for 10 mins.
2.     Chop carrot to small pieces and keep peas ready.
3.     Heat 1 tbsp butter or ghee in a fry pan.
4.     Add bay leaf, cardamom, cloves, cinnamon.
5.     Wait to crackle.
6.     Add chopped onion, sauté to transculent.
7.     Add ginger garlic paste, green chilly and fry well.
8.     Allow to cool, grind it to coarse paste.
9.     Add 2 tbsp oil, add Marathi moggu spice, above paste, garam masala pwd and sauté for few mins.
10.  Now add chopped carrot , peas and fry well, so that it absorbs all the spices to it.
11.  Add strained rice, mint leaves, coriander leaves and fry for 5 mins.
12.  Add water, salt and pressure cook it.
13.  Remove from flame. Wait till pressure goes off.
14.  Open the lid and mix gently.
15.  Garnish with ghee fried golden cashew, chopped mint and coriander leaves.




16.  Serve hot with spicy gravy and raitha.

Soya Chunks Biryani



Soya Chunks Biryani:



This is one of the  favorite recipe from Indian Cuisine. This biryani has a rich spicy taste with great appetizing flavor. Soya Chunks is  calorie rich food (336 calories) with excellent source of proteins and many essential vitamins and minerals. I tried this recipe today and the taste came mouth watering. Ingredients:

·         Raw rice                                  - 2 cup
·         Soya chunks                            - 25
·         Ghee                                        - 2 tbsp
·         Oil                                           - 2 tbsp
·         Onion                                      - 2
·         Ginger garlic paste                  - 1 tbsp
·         Curd                                        - small cup
·         Cinnamon                                - 2
·         Cloves                                     - 2
·         Cardamom                              - 1
·         Bay leaf                                   - 1
·         Coriander leaves                     - handful
·         Mint leaves                              - handful
·         Turmeric pwd                          - ¼ tsp
·         Red chilly pwd                       - 2 tbsp
·         Coconut paste                         - 1 ½ tbsp
·         Lemon juice                            - 1 tbsp
·         Salt to taste


Method:





1.      Wash and soak raw rice for 10 mins. Strain water from it and keep aside.
2.      Wash the soya chunks (meal maker) well and soak in hot water for 20 mins.
3.      Take it aside and squeeze completely to remove water from it.
4.      Heat fry pan, add ghee and fry the meal maker for 5 – 6 mins in medium flame.
5.      Take it aside.
6.      Add oil to the fry pan, add chopped onion, sauté till golden brown, add ginger garlic paste, sauté further.
7.      To this add curd, salt, cinnamon, cloves, cardamom, bay leaf, coriander and mint leaves.
8.      Sauté for 5 mins, till oil separates out.
9.      Add chopped carrot and peas, fry well.
10.  Now add turmeric pwd, red chilly pwd, thick coconut paste and allow to boil.
11.  Add fried soya chunks, ½ tb water and allow to cook.
12.  Add raw rice, fresh lemon juice and check taste for salt and seasonings.
13.  Cook in low flame for 5 mins in pressure cooker.
14.  Once the pressure goes off, mix the rice gently.
15.  Tasty, Healthy Soya chunks biryani is now ready to serve.




16.  It pairs best with onion tomato raitha.
