Spicy Aatukal Paya / Hot Goat Leg Curry / Step by Step Recipe:





















Spicy Aatukal Paya:  






This is my  Mom’s  signature  recipe  and she used to cook this special mutton recipe for special family gatherings. We could never forget the tongue tickling taste, even though it has too much fat content and washing hands after the meal turns to be a big hassle...;)
 


The Goat’s legs or trotters are called Paya in Hindi.!   This   is a hot and spicy curried soup rich with gelatin from the bone marrows.


  
In this authentic  recipe,  the trotters are cooked in hot water with aromatic spices and salt for more time, till the trotters have become tender and juicy.




Try now , the fluffy Appam,   Idiappam  or  chapattis teamed with this hot curry, which  is laden with the rich taste of coconut, masalas and onion tomato paste. 
 




Here we go with  the hot and spicy curry  recipe ...!












Ingredients:






















·         Goat leg  ( trotters ) / Paya                     - 1 dozen
·         Onion                                                    - 3
·         Tomato                                                 - 2
·         Coriander leaves                                    - handful
·         Cooking oil                                            - 2 tbsp
·         Ginger garlic paste                                 - 1 tbsp
·         Turmeric pwd                                         - ½ tsp
·         Red chilly pwd                                       - 2 tbsp
·         Garam masala pwd                                - 1 tsp
·         Coriander pwd                                        - 1 tsp
·         Grated coconut pieces                           - ½ cup
·         Cloves                                                   - 2
·         Cinnamon                                              - 1
·         Saunf                                                    - ¼ tsp
·         Cumin                                                   - ¼ tsp
·         Salt to taste












Method:
























1.     Clean the  Goat’s trotters ( chopped leg pieces ) by genltly scrapping with a  knife .


2.     Wash well, drain and keep aside.






















3.     Chop onion and tomato to small pieces.
4.     Wash and chop coriander leaves.
5.     Heat oil in a pressure pan.
6.     Add ginger garlic paste.
7.     Sauté for a minute.
8.     Add chopped onion and fry well.
9.     Add finely cut tomatoes and cook further.
10.  Now add turmeric pwd, red chilly pwd, garam masala pwd, coriander pwd and salt.
11.  Allow the mixture to cook on low flame for 4 minutes.
12.  Now add goat legs and coriander leaves.




















13.  Combine well.
14.  Pour water enough to cover the contents in the cooker.


15.  Pressure cook in medium flame for 4 whistles.
16.  Then simmer for 12 to 15 minutes.
17.  The trotters take a long time to cook. When cooked it becomes soft and can be chewed upon.
18.  Once the pressure turns off,  stir well.






















19.  Grind the grated coconut to smooth paste with the addition of cumin and  little water. Add the thick paste and allow to boil.
























20.  Check for salt and adjust.
21.  Heat oil in a small fry pan.
22.  Add cloves, cinnamon and  saunf.
23.  Wait to crackle.
24.  Add to paya and mix well.
25.  Add freshly chopped coriander leaves.






















26.  Switch off the flame.
27.  Delicious and spicy Aattukaal paya ready to give a taste.






















28.  Serve hot with fluffy Appam, idly, idiappam, roti, plain rice, fried rice and parathas.

Indian Chicken Curry



















Chicken Curry:




This is an Authentic Indian style curried chicken recipe. Also, this is an all time favorite curry cooked with delicious spices. The recipe is quick and easy to make, which is perfect when you’re in a hurry.




This tasty dish goes well with  Chapati / tandoori roti  /  rice  /  appam  /  puttu  /  dosa or idly.




Here is the recipe to tempt your tastebuds with scads of savory spice..!

Ingredients:




·         Chicken                        - ½ kg
·         Oil                                - 2 tsp
·         Onion                            - 2
·         Tomato                         - 2
·         Green chilly                   - 1 or 2
·         Ginger                           - small piece
·         Garlic                            - 6 pods
·         Coriander                      - 1 tsp
·         Turmeric pwd                 - ¼ tsp
·         Pepper pwd                   - ½ tsp
·         Cumin pwd                    - ¼ tsp
·         Red chilly pwd               - 1 tsp
·         Garam masala pwd        - ½ tsp
·         Coriander leaves            - handful
·         Salt to taste










Method: 






















1.     Chop onion to thin slices.
2.     Heat oil in a pan.
3.     Add onion slices and fry to transculent.
4.     Make a puree of tomato, green chilly, ginger, garlic and coriander in a blender.
5.     Transfer this puree to pan and mix well.
6.     Add turmeric pwd, salt, pepper pwd, cumin pwd and red chilly pwd
7.     Stir and add the chicken.
8.     Sauté for few minutes, until the chicken absorb the spices to it.
9.     Add ½ cup water, cover and cook for 15 to 20 minutes.
10.  Once the chicken is tender, add garam masala pwd.
11.  Combine and remove from flame.
12.  Garnish with freshly chopped coriander leaves.
























13.  Enjoy hot with whole wheat chapattis, naan, roti or rice.

Vegetable Kurma









Vegetable Kurma




Today, for breakfast I prepared Vegetable Kurma and chapattis. This mixed vegetable kurma recipe, I learnt from my Mom. And this  is famous for its rich, creamy, mildly spiced and aromatic tempting flavor. It tastes excellent with a delicious combination of mixed vegetables and a very healthy food and good on proteins.  It combines best with Roti , Naan & Appam too..!


Here is the exotic recipe..try it and see..:)






Ingredients:




Vegetables chopped:




  • Carrot , beans, potato, cauli flower florets, cabbage, capsicum, raddish & peas  - 2 cups

  • Oil                                - 2 tbsp

  • Saunf                           - ¼ tsp

  • Cloves                          - 2

  • Cinnamon                     - 1

  • Onion                           - 2

  • Ginger garlic paste        - 1 tbsp

  • Garam masala pwd        - ½ tbsp

  • Turmeric pwd                - a pinch

  • Red chilly pwd              - ½ tbsp

  • Coriander pwd               - ½ tbsp

  • Tomato                          - 2

  • Green chilly                   - 3 or 4

  • Grated coconut             - ¼ cup

  • Cashew                        - 5

  • Freshly chopped coriander leaves

  • Salt to taste







Method:
















  1. Chop all the vegetables in desired size and boil them in a cup of water with addition of little salt.

  2. Heat oil in a pan, add saunf, cloves and cinnamon, wait to crackle.

  3. Fry onions and ginger garlic paste,  to light brown.

  4. Add garam masala pwd, turmeric pwd, red chilly pwd, coriander pwd and sauté for 2 to 3 mins.

  5. Make a paste of tomato and green chilly.

  6. Add the above paste and cook the mixture till oil separates.

  7. Add ½ cup water and allow to cook covered.

  8. Once the kurma thickens, add all the cooked vegetables.

  9. Grind the grated coconut and cashew to paste with little water.

  10. Add the above paste and combine.

  11. Taste and adjust salt and seasonings.

  12. Allow to boil for 2 mins.

  13. Garnish with freshly chopped coriander leaves.















  1. Enjoy hot with Chapatti, Roti or Naan..!!!

Vada Curry   ( Lentil in Spicy Curry )


Vada Curry is very special South Indian recipe. This yummy dish is often served as a side dish & tastes great with Dosai, Idly or Appam. This curry recipe is hot and spicy and form an integral part of South Indian speciality dishes.


And  here is the easy to make Vada Curry recipe that is absolutely tasty and will be enjoyed by everyone in your family…:)




Ingredients:


  • Bengal gram dal / Channa dal                - 2 cup

  • Saunf                                                   - 1 tsp

  • Red chilly                                              - 2

  • Bay leaf                                                - 1

  • Cloves                                                  - 2

  • Cinnamon                                             - 1

  • Cumin                                                   - ½ tsp

  • Onion                                                   - 2

  • Green chilly                                           - 1 or 2

  • Ginger garlic paste                                - 1 tbsp

  • Tomato                                                 - 2

  • Turmeric pwd                                        - ¼ tsp

  • Red chilly pwd                                      - ½ tbsp

  • Coriander pwd                                       - ½ tbsp

  • Oil to fry

  • Salt to taste

  • Curry & coriander leaves





Method:




To prepare Vada:


  1. Wash and soak Bengal gram dal for 2 hrs.

  2. Drain water completely and grind coarsely  with saunf, red chilly and  salt.

  3. Add little water and grind to thick coarse batter.

  4. Add finely chopped onions and mix well.

  5. Heat oil in a frying pan.

  6. Spread the batter in small portions in hot oil.

  7. Deep fry in medium flame to golden.





  1. Remove and keep aside in a tissue paper.

  


To Prepare Curry:






  1. Heat oil in a pan, splutter bay leaf, cloves, cinnamon and cumin seeds.

  2. Sauté chopped onions and green chillies until golden.

  3. Add ginger garlic paste, fry well till the raw smell disappears..

  4. Add mashed tomatoes and keep the heat in medium and let the tomatoes cook.

  5. Once the oil leaves the surface, add turmeric pwd, red chilly pwd, coriander pwd and salt.

  6. Now add 3 cups of  water and allow to boil covered for 5 mins.

  7. When the gravy thickens, add the fried vadas slightly scrambling them.

  8. Stir  well and let it simmer until the vada soaks up all the liquid from the gravy.

  9. Garnish with fresh coriander and curry leaves.





  1. Delicious , tasty Vadacurry is ready to enjoy with hot soft idli &  golden crisp dosa..:)
