Crispy Adai / Crispy Lentil Dosa





Crispy Adai:  ( Crispy Lentil Dosa )


Adai is one of the popular and crispy South Indian Tiffin recipe.  It is rich in carbohydrateds and proteins.  I luv adai in my Mom’s taste anytime a day.. The crispy onions and the lentils…hmmm the taste is absolutely delicious...!!!


Adai is best suited for dinner and combines excellent with red chutney or coconut chutney and jaggery.


Here is the easy recipe for Adai …Hope u relish it..!!






Ingredients:




  • Idly rice                         - 1 cup

  • Moong dal                    - 1 cup

  • Channa dal                    - 1 cup

  • Toor dal                        - ¼ cup

  • Red chilly                      - 5 or 6

  • Mustard seed                - ¼ tsp

  • Cumin seed                   - 1 tsp

  • Onion                           - 2

  • Asafetida pwd               - a pinch

  • Oil                                - 3 tbsp

  • Curry & coriander leaves

  • Salt to taste





Method:








  1. Wash and soak Rice and all the grams for  3 to 4 hrs.

  2. Grind in a blender to coarse batter.

  3. Add little water while grinding, but the batter should be thick for preparing crispy Adai.

  4. Heat a tawa and add 2 tbsp oil.

  5. Add mustard, cumin, curry leaves, chopped onion, asafetida pwd and sauté.

  6. Add this to the coarse batter, add salt, chopped coriander leaves and mix well.









  1. Take a ladle full of batter and spread in thin concentric layer in hot tawa.

  2. Drizzle oil or ghee to the sides to get crispy edges.

  3. Once it turns golden, flip to other side and cook in reduced  flame.

  4. Take it out, once the crispness and golden color comes on both sides.











  1. Wow…lipsmacking adai is ready to taste.







  1. Serve hot with red chutney or coconut chutney.

Adai Dosai :   (Kara Dosai)



Here is a simple and tasty recipe from South Indian Cuisine. This has a special taste from other Adai varieties. The ingredients used in this mainly consists of boiled rice and toor dal. So, its healthy and nutritious and ideal for all age groups and kids love this great taste. Lets see the preparation method for this….



Ingredients:



  • Toor dal                                   - 2 cup

  • Par boiled rice                         - 4 cup

  • Oil                                            - 5 tbsp

  • Onion                                      - 3

  • Garlic                                      - 6

  • Red chilly                                - 5

  • Fennel seeds                           - 1 tbsp

  • Coconut(grated)                      - 1 cup

  • Salt to taste

  • Fresh coriander leaves



For Seasoning:

  • Mustard seeds                        - ¼ tsp

  • Cumin seeds                           - ¼ tsp

  • Split urad dal                           - ¼ tsp

  • Asafoetida                               - ¼ tsp

  • Bengal gram dal                      - 1 tbsp

  • Curry leaves                           - a handful      





Method:



  1. Take Toor dal and boiled rice in a bowl, combine them and wash well.

  2. Soak them for 1 to 2 hrs.

  3. Drain water and grind by adding 1 ½  onion quartered into four, fennel seeds, garlic, red chilly and salt.

  4. Grind it to coarse thick batter.

  5. Heat oil in a pan, season with mustard, cumin, split urad dal, asafoetids, curry leaves, Bengal gram dal and chopped onion pieces.

  6. Toss it and mix them to the batter.

  7. Grate coconut pieces to fine flowers and add them to the above batter.

  8. Add chopped coriander leaves and Mix all contents completely.

  9. Heat a thick dosa girdle ( pan )

  10. Spread the thick flowing coarse batter in concentric circles.

  11. Drizzle oil all down the sides.

  12. Allow to cook in medium heat till its golden brown.

  13. Flip the Adai over and cook the other side till it turns light golden.

  14. Take care not to overcook it.







  1. Serve hot with Avail or chutney and jaggery.
