South Indian Delicacy - Drumstick Sambar - Just For You !!!















Drumstick Sambar:




Sambhar or Sambar is a traditional flavorful South Indian recipe. The key ingredients used for making Sambar are yellow lentils also called as toor dal, various vegetable mixed with spices and tamarind juice. We can use any vegetables of our own choice such as eggplant, brinjal, ladysfinger, bottlegourd, pumpkin, frenchbeans, carrot, radish, etc.




This tasty sambar is an important menu at all South Indian homes and also  takes a prime place during marriage feast.






Here is the traditional and easy recipe..!








Ingredients:






·         Toor dal                                - ½ cup
·         Tamarind                              - half lemon size
·         Drumstick                             - 2
·         Onion                                   - 1
·         Tomato medium sized            -  2                  
·         Oil                                         - 1 tbsp
·         Mustard                                - ¼ tsp
·         Cumin                                  - ½ tsp
·         Fenugreek                            - ½ tsp
·         Asafetida                              - a pinch
·         Red chilly                             - 1
·         Turmeric pwd                        - ¼ tsp
·         Red chilly pwd                       - ½ tbsp
·         Coriander pwd                       - ½ tbsp
·         Sambar pwd                          - 1 tsp
·         Salt to taste
·         Fresh coriander leaves










Method:
















1.     Wash the toor dal and soak for 5 minutes.
2.     Soak the tamarind in water for 10 minutes and extract the juice.
3.     Chop onion, tomato to slices.
4.     Cut drumstick to 3 inch pieces.
5.     Pressure cook toor dal for 3 whistles.
6.     Heat oil in a fry pan.
7.     Add mustard, cumin, fenugreek and wait to crackle.
8.     Add asafetida, red chilly and curry leaves and sauté.
9.     Now add chopped onion and fry till soft.
10.  Add chopped tomato and cook for a minute.
11.  Add chopped drumstick, turmeric pwd, red chilly pwd, coriander pwd, salt and fry for a minute.
12.  Add sambar pwd, mix well.
13.  Add a cup of water and allow it to boil covered in medium flame.
14.  Once the drumstick is cooked, add the cooked the mashed toor dal.
15.  Add tamarind juice and check for salt.
16.  Remove from flame.
17.  Garnish with freshly chopped coriander leaves.






















18.  Serve hot with white rice or with spongy idly and crispy golden dosa.

Moong Dal Sambar









Moongdal Sambar:




Today, I bring for you a delicious side dish for Idly, dosa, chapati & poori. This is pretty simple recipe to prepare. I make this very often. Moong dal is rich in protein and this sambar is  a healthy way to include high amounts of protein in our diet.


Here is the easy and tasty simple recipe for moongdal sambar…!

Ingredients:






  • Moong dal                                - 1 cup

  • Onion                                       - 1

  • Tomato                                     - 1

  • Green chilly                               - 2

  • Oil                                            - 1 tbsp

  • Mustard                                    - ¼ tsp

  • Cumin                                       - ½ tsp

  • Asafetida                                  - ¼ tsp

  • Turmeric pwd                            - ¼ tsp

  • Salt to taste







Method:
















  1. Wash and pressure cook the dal till it is done.

  2. Heat oil in a pan.

  3. Add mustard, cumin, curry leaves and asafetida.

  4. Wait to crackle.

  5. Add onion pieces and fry till transculent.

  6. Add green chillies and tomatoes.

  7. Fry till the tomatoes are soft.

  8. Add turmeric pwd and salt.

  9. Add ½ cup water and allow to boil.

  10. Smash the cooked moong dal and add to the pan.

  11. If required add water , depending on the consistency of sambar you prefer.

  12. Taste and adjust salt.

Murungai Keerai Sambar (Lentils with Moringa Leaves)



Murungai Keerai Sambar:

This Murungai Keerai Sambar is one of the most loved dishes in our family. This is a very tasty and healthy dish. The preparation is quite simple and can be served with hot idly and dosa or plain rice. This Murungai or drumstick leaves are rightly called as ‘Potential life saver’, due to its rich protein content. Also the leaves are packed with essential vitamins and minerals esp. Vit A & C. It prevents Malnutrition and related diseases.







This tiny Murungai leaves has enormous benefits like…





·         4 times the Vit  A of Carrot
·         7 times the Vit C of Orange
·         4 times the calcium of Milk
·         3 times the Potassium of Bananas
·         ¾ times the Iron of Spinach
·         2 times the protein of yogurd


I will be preparing this Murungai Keerai sambar, frequently,



and here is the recipe of the lip-smacking delicacies of South India for you…



Ingredients:





·         Murungai Keerai                                    - 2 cups
·         Toor dal                                                - 100 g
·         Oil                                                        - 2 tsp
·         Onion                                                   - 1
·         Tomato                                                 - 1
·         Asafetida pwd                                       - ¼ tsp
·         Turmeric pwd                                        - ½ tsp
·         Methi seeds                                          - ½ tsp
·         Mustard                                                - ¼ tsp
·         Cumin                                                   - ½ tsp
·         Red chilly                                              - 1 or 2
·         Red chilly pwd                                      - 1 tbsp
·         Coriander pwd                                       - ½ tbsp
·         Sambar pwd                                         - ½ tbsp
·         Tamarind juice                                       - 1 tbsp
·         Salt to taste


Method:





1.     Wash and pressure cook the toor dal along with asafetida, turmeric pwd.
2.     Heat oil in a pan, season with methi seeds, mustard, cumin, red chilly and curry leaves.
3.     Wait to crackle.
4.     Add chopped onion and sauté till it turns light pink.
5.     Add chopped tomatoes, stir until it is cooked.
6.     Now add turmeric pwd, red chilly pwd, coriander pwd and salt.
7.     Stir well add Murungai (drumstick leaves).
8.     Sauté in low flame. Add sambar pwd , salt , water and allow to cook covered for 5 mins.
9.     Now add the mashed dal, tamarind juice,
10.  Stir well and allow to boil for 2 to 3 mins.




11.  Serve hot with white steamed rice.

Vegetable Sambar



Vegetable Sambar:

For this dish, vegetables like carrot, ladies finger, drumstick, brinjal  and radish are suitable and tastes awesome. It’s a common menu for lunch in South India and its very healthy recipe. Let’s try it …







Ingredients:



  • Toor dhal                                 - 1 cup

  • Onion                                      - 1

  • Tomato                                    - 2

  • Red chilly                                - 1

  • Vegetables                              - 1 cup

  • Turmeric powder                    - ¼ tsp

  • Vendaiyam                              - ½ tsp

  • Sambar powder                      - ½ tbsp

  • Red chilly powder                   - 1 tbsp

  • Mustard seeds                        - ¼ tsp

  • Cumin seeds                           - ½  tsp

  • Split orid dhal                          - ½ tsp

  • Tamarind paste                       - ¼ tbsp

  • Curry and coriander leaves

  • Asafoetida powder

  • Salt to taste





Method:



  1. Boil toor dhal in cooked with turmeric powder, vendaiyam and asafoetida powder.

  2. Heat oil in pan, temper mustard seeds, cumin seeds, split orid dhal.

  3. Add onion pieces, fry well and add tomato pieces followed by vegetables.

  4. Add red chilly powder, sambar powder, salt and allow to boil by adding water.

  5. Now add boiled toor dhal, mix well.

  6. Add tamarind paste and allow to boil for just 2 mins ( also few drops of lemon juice can be added instead of tamarind)

  7. Garnish with coriander leaves and tasty veg sambar, ready to serve.
