Garlic flavored Avarai Curry:



This is a healthy and nutritious recipe.  This vegetable is loaded with disease fighting vitamins, minerals and anti-oxidants. It usually costs less and it bursts with flavor, as you get this ‘just picked’ from market..



Ingredients:



  • Avaraikai                     - 250 g

  • Oil                                - 4 tbsp

  • Onion                          - 2

  • Tomato                        - 2

  • Garlic                          - 6 pod

  • Ghee                           - 1tbsp

  • Turmeric pwd              - ¼ tsp

  • Red chilly pwd             - 1 tbsp

  • Pepper pwd                 - 1 tbsp

  • Coriander pwd            - ½ tbsp

  • Lemon juice                - 1 tbsp

  • Salt to taste

  • Coriander leaves



For Seasoning:

  • Mustard seeds                        - ¼ tsp

  • Cumin seeds                           - ¼ tsp

  • Split urad dal                           - ¼ tsp

  • Asafoetida                               - ¼ tsp

  • Curry leaves                          



Method:



  1. Wash Avarai (avaraikai Veg) in running water and cut into fine pieces.

  2. Heat oil, add seasonings, allow to splutter.

  3. Add chopped onion and toss it to light brown.

  4. Mash tomato and garlic to puree in mixer.

  5. Add this paste to the above content and let it cook for about 5 mins.

  6. Add turmeric pwd, red chilly pwd, pepper pwd, coriander pwd and mix well.

  7. Pour ½ tb water to this and cook in low heat, until it comes to thick gravy.

  8. Meanwhile, heat water in a pan, add cut avarai pieces and allow to boil with salt.

  9. Once its completely cooked and turns spongy, transfer this to the above curry masala.

  10. Combine by adding 1 tbsp ghee.

  11. Remove from heat, add 1 tbsp fresh lemon juice and mix.

  12. Garnish with coriander leaves.







  1. Serve hot with white steamed rice or as sidedish to tiffin menus.
