Carrot Halwa





Carrot Halwa:



I learnt this dish, a family favourite from my mother.  This carrot halwa is prepared with generous splash of ghee and is addictive. Carrot is mounded with vitamin A, as it promotes good vision and has appealing color and aroma, as kids enjoy having this halwa and ask for more…







Ingredients required:



·         Carrot                          - 250 g

·         Ghee                           - 6 tbsp

·         Cashew nuts               - 5

·         Raisins                        - 8

·         Almond nuts                - 4

·         Cardomon                   - 2

·         Sugar                          - 150 g



Procedure:



  1. Wash carrot in running water and peel off the skin using a peeler.

  2. Grate carrot to fine shreddings.

  3. Heat ghee in a non stick fry pan.

  4. Add cashewnuts and fry them to golden.

  5. Take it aside. Fry the cardamom and raisins in the remaining ghee and take it aside.

  6. Now add the carrot shreddings to the ghee, and sauté it.

  7. Cook it covered by adding a pinch of salt (highlightens the sweet taste) for 12 to 15 mins.

  8. Cook it stirring once in a while.

  9. Once the carrot is shrinked and turned soft, add sugar and toss it continuously.

  10. Sugar combines with carrot and starts thickening.

  11. Lower the flame and continue stirring.

  12. You can see, halwa rolling with ladle while stirring.

  13. This is the right time to turn off the flame.

  14. Now add fried cashewnuts, raisins and cardamom. Mix all of them.







  1. Garnish with grated almond nuts.
