Vegetable Poriyal (karamani Poriyal)



Vegetable Poriyal:  (Karamani Poriyal)









This recipe is scrumptiously simple and introduces your family and friends to wholesome healthy food. 



Ingredients:



  • Vegetable (karamani, beans, cabbage, carrot, beetroot, etc)

  • Coconut pieces           - ¼ cup

  • Garlic                          - 1 or 2

  • Oil                                - 1 tbsp

  • Mustard seeds            - ¼ tsp

  • Cumin seeds               - ½ tsp

  • Red chilly                    - 1

  • Asafoetida powder      - a pinch

  • Salt to taste

  • Curry and coriander leaves





Method:



1.      Cut the vegetable into small pieces.

2.      Heat oil add mustard seeds, allow to splutter, add cumin seeds followed by red chilly and asafoetida powder and fry.

3.      Add vegetable, salt and fry well, allow to boil with little water in low flame.

4.      Grind coconut pieces with garlic in mixie to fine flowers.

5.      Add this to veg poriyal and mix well

6.      Garnish with coriander leaves;
