Plantain Stem Moongdal Kuttu:
( Vazhaithandu paasiparupu kuttu )
This recipe is rich in fibre content, protein, carbohydrate, and calories. This can be easily prepared. Also a healthy and nutritious side dish, pairs ideal with chapatti or white steamed rice.
Ingredients:
- Plantain stem - 1 piece
- Moong dal - a small cup
- Turmeric pwd - ¼ tsp
- Coconut pieces - ½ cup
- Cumin seed - 1 tsp
- Green chilly - 1 or 2
- Oil - 1 tsp
- Mustard - ¼ tsp
- Split urad dal - ½ tsp
- Asafoetida pwd - a pinch
- Salt to taste
- Curry leaves
Method:
- Clean and cut the plantain stem to fine small pieces.
- Heat a dry pan, roast moong dal till it fragrant.
- Add hot water and allow to cook covered for 5 mins.
- To this add plantain stem pieces, salt, turmeric pwd.
- Cook it further for 5 mins in medium flame.
- Meanwhile, grate coconut to pieces.
- Add cumin seeds, green chilly to coconut pieces and grind it to paste in a blender by adding little water to it.
- Add this paste to the above content and combine well.
- Simmer the flame and toss it for futther few mins.
- See to it the contents are completely cooked.
- Heat a tbsp of oil, temper with mustard, asafoetida pwd, split urad dal and curry leaves.
- Garnish with chopped coriander leaves.
