Spicy Egg korma:
Here is a simple and tasty recipe of Indian Cuisine. This pairs best with Chapati, Roti, Puri, Idiy and crispy Dosa. This recipe is easy to cook and healthy too. The spicy taste of this egg kurma will delight the taste buds!
Ingredients:
- Eggs - 3
- Oil - 4 tbsp
- Onion - 2
- Tomato - 3
- Ginger garlic paste - 2 tbsp
- Green chilly - 2
- Turmeric pwd - ¼ tsp
- Red chilly pwd - 1 tbsp
- Coriander pwd - 1 tbsp
- Garam masala pwd - ½ tbsp
- Coconut pieces - 1 cup
- Cashew - 4 to 5
- Salt to taste
- Fresh lemon juice - 2 tbsp
- Coriander leaves
Spices:
- Cloves - 2
- Cardamom - 2
- Cinnamon stick - 2
- Fennel seeds(saunf) - ½ tsp
- Cumin seeds - 1 tsp
Method:
- Heat oil in pan, add chopped onion sauté to transculent.
- Add ginger garlic paste, green chilly followed by chopped tomato pieces.
- Allow to cook for 4 to 5 mins.
- Remove from heat, cool it and grind to fine paste in mixer.
- Heat oil, season with spices, add chopped onion pieces and toss it.
- Add above paste, combine well.
- Add turmeric pwd, red chilly pwd, coriander pwd, garam masala pwd, salt and stir it.
- Allow to cook covered by adding 1 ½ tb water, for 5 mins in medium heat.
- Meanwhile grate the coconut to pieces and grind to thick paste by adding little water and cashew to it.( cashew gives a rich aroma)
- Now add this paste to the kuma, and allow to boil (keep it in low heat, once the first bubble appears)
- Take eggs, break them and drop into kurma one by one without overlapping each other.
- Allow to boil covered in low heat for 5 mins. Take care not to stir in between as it smashes the egg.
- Once the eggs are completely cooked on one side in kurma, carefully turn them to the other side and allow to boil.
- Taste and adjust the salt and seasonings.
- Remove from heat and add 2 tbsp fresh lemon juice and combine well.
- Garnish with coriander leaves and serve hot.
