Poornam Kozhukatai: (Steamed Sweet Dumplings)



Poornam Kozhukatai:
 (Steamed Sweet Dumplings)


Indian Sweets are famous for its irresisitable delicious taste.. Kozhukatai is a healthy carbohydrate rich food. It has a tremendous nutritional impact. This sweet makes one n all empty up the plates and asking for more….






Ingredients:


  • Raw rice                                  - 2 tumbler

  • Ghee                                       - 2 tbsp

  • Gingely oil                               - 1 tsp

  • Cashew                                   - 5

  • Almond                                    - 4

  • Fried gram                              - 4 tbsp

  • Sesame seeds                        - 4 tbsp

  • Jaggery (powdered)               - 6 tbsp

  • Cardamom (powdered)          - 2

  • Grated coconut                       - 1 small cup





Method:


To Prepare Outer layer:


  1. Wash raw rice and soak it for 6 to 8 hours.

  2. Drain water from it completely, dry it in a clean cotton towel.

  3. Dry it, such that the rice grains are separated from each other.

  4. Grind rice grains to fine smooth flour.

  5. Sieve this flour to remove any granules present in it.

  6. Put this flour in a cloth (slightly sprinkle water to the cloth) and boil it in an idly cooker for 12 to 15 mins.

  7. Allow to cool, the boiled rice flour is ready.

  8. Now take 1 tb water in a bowl, add 1 tbsp gingely oil, salt to it and allow to boil.

  9. Add the rice flour to this, by stirring continuously until it comes to spongy dough.

  10. Our outer layer for kozhukatai is ready.



To prepare Sweet Poornam:


  1. Grind the grated coconut to fine flowers.

  2. Heat 1 tbsp ghee in a pan, add this flowers and toss in low flame.

  3. Grind fried gram, cashew, almond, sesame and jaggery to coarse powder.

  4. Transfer this coarse powder to the pan and toss for 3 to 4 mins.

  5. Remove from heat, allow to cool, sprinkle cardamom pwd and make small round balls.

  6. Our Sweet Poornam (inside stuffing) is ready.



To prepare Kozhukatai:


  1. Take a little dough (above prepared), make it small lemon sized balls, flatten it.

  2. Stuff the sweet Poornam ball inside and cover it with dough.

  3. See to it the poornam is completely covered.

  4. Stuff all the sweet Poornam balls in dough like this in desired shapes.

  5. Apply oil on idly plates, transfer this and boil for 10 mins.







               Tasty delicious kozhukatai is ready to delight you…
