Chettinad Fish Kuzhumbu:

Ingredients needed:
· Fish - 250 g
· Gingely oil - 6 tbsp
· Onion sliced - 1 big
· Tomato - 2
· Garlic cloves - 6
· Cumin pwd - ½ tbsp
· Turmeric pwd - ¼ tsp
· Red chilly p - 3 tbsp
· Pepper pwd - 1 ½ tbsp
· Coriander pwd - 1 tbsp
· Tamarind paste - 3 tbsp
· Fresh lemon juice - 1 tbsp
· Salt to taste
· Coriander leaves
For Seasoning:
- Mustard seeds - ¼ tsp
- Cumin seeds - ¼ tsp
- Split urad dal - ¼ tsp
- Vendaiyam seeds - 1 tsp
- Asafoetida - ¼ tsp
- Curry leaves
Method:
- Wash, clean the fish and strain water from it.
- Heat gingely oil, season with mustard, cumin, split urad dal, vendaiyam, asafoetida and curry leaves.
- Add finely chopped onion, deep fry it to light brown colour.
- Add grated garlic pieces, followed by chopped tomato pieces.
- Let it cook for 5 mins in medium heat.
- Add turmeric pwd, red chilly pwd, pepper pwd, coriander pwd, cumin pwd and salt and combine well.
- Toss it until oil separates.
- Add water and tamarind paste and allow to cook it covered.
- Once the kuzhambu gets thickened, see for salt.
- Add cleaned fish to the above kuzhambu, allow to boil in medium heat for another 4 mins.
- Turn off the flame, add fresh lemon juice.
- Garnish with chopped coriander sprinklings.
