Bindi Masala Fry





Bindi Masala Fry:



Today, I found bounty of fresh Bindi vegetable in the market. I tried a recipe for  something new. This recipe is handed down from my Grandma’s recipe. It tastes awesome. The just picked bindi produce is loaded with disease fighting vitamins, minerals and anti oxidants plus it usually costs less and bursts with flavor.







Ingredients:



·         Bindi                            - 250 g

·         Onion sliced                - 1

·         Oil                                - 1 tbsp

·         Cumin seeds               - 1 tbsp

·         Red chilly                    - 2 to 3

·         Lemon juice                - 1 tbsp

·         Coriander leaves

·         Salt to taste



To Temper:



  • Mustard seeds                        - ¼ tsp

  • Cumin seeds                           - ¼ tsp

  • Split urad dal                           - ¼ tsp

  • Asafoetida                               - ¼ tsp

  • Curry leaves  







Method:



  1. Wash bindi ( ladies finger ) in running water and cut it to small round pieces.

  2. Fry cumin seeds and red chilly in a dry pan, cool it and grind to coarse pwd.

  3. Heat oil, add seasonings, allow to splutter.

  4. Add onion and cook it stirring until tender.

  5. Add sliced bindi pieces,salt, toss it in medium flame for 4 mins until it shrinks and turns soft.

  6. Sprinkle water to it and cook it covered for another few mins.

  7. Toss gently add the pwd above prepared, mix them completely.

  8. Remove from heat, add 1 tbsp lemon juice and combine.







  1. Garnish by sprinkling coriander leaves.
