Kaarthigai Deepam – Festival of Lights
Its amazing to see
Rows of glittering earthen oil lamps outside every home,
Full moon at the sky
And the joyous burst of firecrackers . !
The lighted lamp is an auspicious symbol that is considered it brings Joy and Prosperity..!
I am happy to share the Pori Urundai recipe , which is a traditional sweet prepared for Kaarthigai.
Enjoy this delectable dessert now...:)
Ingredients:
- Puffed rice / pori - 2 cups
- Jaggery pwd - ¾ cup
- Ghee - 1 ½ tbsp
- Coconut pieces - ¼ cup
- Cardamom pwd - ¼ tsp
Method:
- Heat ghee in a pan.
- Add coconut pieces, cardamom pwd and pori to it.
- In a separate vessel, add jaggery and little water.
- Allow to heat, until it turns thick syrup.
- Remove from heat.
- Pour this syrup to the pori mix and combine well.
- Grease your palms with ghee and start making the mixture to medium sized balls.
- Delicious and healthy pori urundai ready to taste now..
